MPC produces a wide range of products for the wholesale market including macadamia kernel, paste and oil. All sales of wholesale products are handled by our marketing company, Macadamia Marketing International (MMI). To contact MMI click here.

Macadamia Kernel is used in various market segments including:

  • Snacks: Whole and half kernel blends, raw, roasted and roasted and salted or flavoured are packed for sale in retail outlets around the world.
  • Ingredients for chocolates: Whole kernels (Style 1) for enrobing, Styles 2 and 4 for macadamia caramel and chocolate clusters, small chips and pieces (Styles 6, 7 & 8) for chocolate bars and toppings. Macadamia Paste, made to specifications for pralines.
  • Ingredients for biscuits and cakes: Style 4 macadamias are ideal for large cookies and biscuits. Styles 5 & 6 are excellent for finer, smaller biscuits, granola bars and for inclusion in cakes. Macadamias in a Christmas cake are superb.
  • Ingredients for ice cream: The popularity of the candy coated macadamia chip in ice cream has grown tremendously in the USA and Japan. We can supply a variety of kernel sizes that suit this use.
  • Ingredients for food service: Awareness of the versatility of macadamias has extended their use into all areas of food service. Restaurants in Australia and overseas are creating exciting new menu items with macadamias. Style 4, halves, in salads; styles 5 & 6 in desserts and small chips (styles 7 & 8) as toppings for meat and food dishes. Macadamia Meal is used for crumb coating of fish and chicken and can be added to seasoning mixes for a subtle flavour.

Macadamia Kernel

Macadamia Kernel is our core business and we lead the world in quality. Because we are owned by growers we are guaranteed substantial quantities of nut-in-shell for processing every year which enables us to commit large quantities of kernel to our customers and meet their expectations every time. It also enables us to implement on-farm quality systems that ensure our macadamias are wholesome and fresh when they get to the consumer. We are also able to supply substantial quantities of a range of kernel sizes, a factor that is important to many of our customers.

Macadamia Styles

Macadamia Paste

Macadamia paste is a new addition to our family of fine products. Created from roasted kernel it is ideally suited to applications in ice cream, confectionery soft centres and bakery products. Macadamia paste is also well suited to savoury products like satay sauces and pestos. With a shelf life of 24 months from production this product is dry roasted and milled to ensure consistency and a fabulous flavour.

Macadamia Oil

The flavour of macadamia oil is clean, intense and rich. Macadamia oil has one of the highest levels of monounsaturated fats of any tree nut oil and contains no cholesterol. It is arguably one of the most versatile oils available for food service applications yet remains little known due to the popularity and abundance of other vegetable oils.

Refined macadamia oil is a popular ingredient in cosmetics where the natural anti-oxidant qualities of the oil and high levels of palmitoleic acid make it ideal for application to the skin. Macadamia oil contains approximately 60% oleic acid, 17% palmitoleic acid and 1% linoleic acid. It also contains 3% omega-6 and 3% omega-3.

Macadamia oil’s rich, cushiony skin feel, high oxidative stability and high palmitoleic content make it especially suitable for medicated creams and suncare formulations. Derivative of Macadamia oil in cosmetics include the light emollient Ethyl Macadamiate and water soluble PEG-16 Macadamia Glycerides.

Nut Style 0 – Large Wholes


This kernel style is scarce. Representing only a small proportion of the kernel we produce, Style 0 is coveted by connoisseurs around the world at a premium price. The product consists of very large kernels which range from 20mm upwards. Style 0 comprises no less than 98% large, whole kernel, carefully processed to ensure consistency of colour, texture and size.

Nut Style 1 – Wholes


Style 1 is the most sought after style of whole kernel after Style 0. Style 1 presents well in premium snack mixes and chocolates where the consumer requires whole kernel. Style 1 consists of a minimum 95 % whole kernel with a size range of 17-20mm.

Applications & Uses

Style 1 is most adaptable. It is primarily used in premium snack packs. Style 1 is also widely used as a gourmet table nut.

Nut Style 2 – Wholes and Halves Blend


The traditional “Wholes and Halves” range, Style 2 is a 50/50 mixture of whole kernel and large pieces, typically ranging in size from 14-20 mm. Style 2 has a wide variety of applications of which the most popular is snack.

Applications & Uses

Either dry roasted or roasted and salted, Style 2 macadamias are best suited for retail packs or sold loose as snacks.

Nut Style 3 – Wholes and Halves Blend


Style 3 can be considered when a lower priced alternative to Style 2 for snack applications is needed and a lower percentage of whole kernels is acceptable. At least 15%, by weight, of Style 3 pieces are whole kernel.

Applications & Uses

Style 3 macadamias are best suited for inclusion in mixed nut packs for retail sale or food service.

Nut Style 4 – Halves


Style 4 (Halves) constitutes around 45% of macadamia kernel produced. Within the Style 4 category we produce a range of sub-styles, with the following being the two main types:

Style 4 – 80% half kernel and pieces. Kernel passes through a 14mm round hole screen and is held on a 12mm round hole screen.

Large (4L) – 0-15% whole kernel with the remainder halves and large pieces held on a 15mm screen.

Applications & Uses

Whether raw or roasted, Style 4 can be mixed with or added to a wide range of products. Excellent for use as a bakery ingredient, or to create retail snack packs.

Nut Style 5 – Large Chips


This style consists of small halves and large chip produced through a special screening process. Kernel passes through a 12mm round hole and is held on a 8mm square mesh. Chip size is typically between 9 and 12 mm.

Applications & Uses

Style 5 is best suited for adding to ice cream, bakery and other food service applications.

Nut Style 6 – Chips


Style 6 consists of kernel “chip” that passes through a 8mm square mesh and is held on a 6mm square mesh.

Applications & Uses

Style 6 can be used raw, dry roasted or oil roasted depending on the use of the product. It can be used as a topping on pies or as an ingredient in ice cream, cookies, and pastries.

Nut Style 7 – Small Chips


Style 7 is kernel that passes through a 6mm square mesh and is held on a 5mm round mesh.

Applications & uses

Style 7 macadamias have a multitude of uses: macadamia sprinkles for toppings, for fine food preparation in restaurants and hotels, for addition to cereals or muesli and as a basic ingredient for nut breads, cakes, pies and pastries. The most popular application for Style 7 is in the commercial production of packaged cookies and biscuits.

Macadamia Meal

Macadamia Meal

Macadamia Meal consists of small pieces and fine powder of macadamia kernel (up to 3mm in size).

Applications & uses

Macadamia meal is used in the bakery sector as an alternative to flour, a substitute for bread crumbs in coatings and for the production of a macadamia praline. It can also be used in cakes to provide that subtle macadamia flavour.
